Southern Style Chili

Southern Style Chili is a staple dish in the South during the colder months of the year. It is a dish that is made with beef, pinto beans, kidney beans, bell peppers, tomatoes, mushrooms, onions and a blend of spices that make a very hearty meal. Unlike a Texas Chili, a Southern Style Chili typically has beans in it.
Anytime you make a chili you can do many things to make it your own. If you like it more spicy, add some more Cayenne or Crushed Red Pepper Flakes. If you are looking for something a little sweeter, add in some brown sugar. The end result is a rich and flavorful dish that is sure to warm you up on a cold day. Whether you're a chili aficionado or a newcomer to the dish, Southern Style Chili is a must-try for anyone looking for a hearty and satisfying meal.

Equipment

  • 1 Medium to Large Cast Iron Dutch Oven

Ingredients
  

  • 2-1/4 lbs Ground beef
  • 28 oz Crushed Tomatoes
  • 1 can Pinto Beans (Drained and Washed)
  • 1 can Dark Red Kidney Beans (Drained and Washed)
  • 1 large Green Bell Pepper Sliced
  • 1 med Onion Sliced
  • 3/4 cup Mushrooms Sliced
  • 4 med Tomatoes Diced
  • 1-1/2 tbsp Tomato Paste
  • 1 tsp Chili Powder Add to taste
  • 4 tbsp Wagyu Tallow or Extra Virgin Olive Oil
  • Salt Too Taste
  • 1 to 2 cups Water
  • 4 Tbsp Elite BBQ Smokers BBQ Rub

Elite BBQ Smokers BBQ Rub

  • 1/2 cup Garlic Salt
  • 1 cup Kosher Salt
  • 1/4 cup Ground Mustard
  • 1 tbsp Ground Cinnamon
  • 2 tbsp Red Curry Powder
  • 1/2 cup Crushed Black Pepper
  • 1 cup White Sugar
  • 2 cup Brown Sugar
  • 1 cup Smoked Paprika
  • 2 tbsp Cayenne Pepper

Instructions
 

  • In a large Cast Iron Dutch Oven add 3-4 tbsp of Wagyu Tallow and heat on medium to medium high temperature.
  • When your oil gets hot, add in the chopped onions and sauté them until the are translucent / caramelized.
  • Add your ground beef, 1 tsp - Chili Pepper and 3-4 tbsp - Elite BBQ Smokers BBQ Rub. Break up the ground beef and cook until it is browned.
  • Once the ground beef is cooked, it is a good time to taste the meat and see if it needs more Salt, Pepper or Spicy Seasoning
  • Add in the Tomatoes, Pinto Beans, Dark Red Kidney Beans, and 28 oz. Can of Crushed Tomatoes. Mixed all the ingredients together.
  • Add in about 1 to 1-1/2 tbsp of tomato paste and mix all the ingredients together.
  • Now add in the Green Bell Pepper (chopped) and Mushroom (Sliced) and mix all the ingredients together.
  • Add in just enough water to have all the ingredients submerged and reduce to low heat
  • Simmer for 2 - 2-1/2 hours to allow all the flavors to meld together. *about 1-1/2 hours into the simmering process, it is a good idea to taste the Chili and see if you need to add more Salt, Pepper or Spicy Seasoning.
  • Now Serve and Enjoy.
